Yummy Dinner!
Cooking fish intimidates me. I did it anyways. Tonight our dinner consisted of baked Wild King Salmon, sweet potatoes with EVOO and cinnamon, and asparagus with lemon juice. Felt extremely satisfied after this scrumptious meal and the salmon turned out perfect. Easier than expected! Used a little bit of EVOO, garlic, pepper and lemon juice and baked at 325 for approximately 18-20 minutes.
After dinner, I chose to grill up some fine breasts so Matt could eat them for lunch (haha, if that didn't make you giggle the first time, read it again). Matt has dove into this challenge head on and with a dinner meeting out last night and box lunches brought in yesterday and today he chose not to eat rather than participate. If you haven't noticed he is a bit of a mental case when it comes to competition. He WILL choose to starve himself rather than eat anything on the "Do Not Eat List". Grilling up this chicken will insure that he gets what he needs throughout his day!
While I was slaving over the grill, Matt was preparing some yummy quacamole. We figure we can serve this right on my, I mean his chicken breasts. I have been using lettuce (see previous post) to wrap my sandwich up and will surely do the same tomorrow with the chicken and quac.
So far eating has been easy. However, I am a bit under the weather so my workouts have been nil. I hope to feel better tomorrow because I have some serious angst not being able to run in this weather!
Finally, I was told last night that I would NOT be winning this challenge. Okay, I wasn't planning on trying to win, but now I am. So watch out.

so glad to see your blog is back!! Nice job on the food challenge... I always think the first few days are the hardest.
Ok, I'm hungry. Apparently sweet potatoes are all the rage with this challenge!
